Serving size: 1 omelet

Counts as:1 Protein,2 Vegetables,1/2 Dairy

2 or 3 eggs
1/2 cup (125ml / 78g) cooked broccoli, chopped
1 tsp (.5ml) dried onion
1oz (28g) reduced-fat cheddar or swiss cheese
2 Tbsp (30ml) skim milk
1/4 tsp (1ml) lite salt
1/4 tsp (1ml) dried basil
1/2 tsp (2.5ml) garlic powder
1 tomato cut into 6 slices

1 Beat eggs until light and fluffy.

2 Stir in broccoli, onion, half of the cheese, milk, salt, basil and garlic powder.

3 Pour into ungreased baking dish.

4 Arrange tomato slices on top; sprinkle with remaining cheese.

5 Bake, uncovered, in 325F (160C) oven for 20-25 minutes.
