Default Veggie Dip/Sandwich Filling

Saw this on Food Network this weekend; it was considered a sandwich filling, but I really saw it more as a dip.

1 Red Bell Pepper
1 Zuchinni
1 Onion (I only used 1/2 of an onion)
1 tbs Olive Oil
1 Block of Cream Cheese (of course I used SB Friendliest)
Salt & Pepper (I also added Garlic Powder)

Preheat oven 400
Slice each veggie into similar sized slices.
Toss sliced veggies with Olive Oil, Salt & Pepper.
Lay out on baking sheet.
Cook for 45 minutes, stirring once half way through
Once finished let veggies cool slightly.

In food processor, blend together veggies and cream cheese.

Enjoy with various veggies--I used Daikon, or use as a WW Pita filling in P2.
