LA Weight Loss - Counting whole artichokes

Hey, does anyone know how to count a whole, steamed artichoke. Do you think 1 or 2 vegetables? Book says 1C.

Yeah, you can't exactly figure an artichoke in cups, since you don't eat the whole thing. I'd guess it would be 1 veggie, because all you're eating are the edges of it (until you reach the heart). If it's a huge one, maybe count it as 2, but that's kind of a stretch.
