What does the term "exchanges" refer to? For example, Exchange: 2 lean meat, 2 vegetable.

It's the diabetic exchange diet, it's useful in both managing diabetes and losing weight.. I'll find some links for you. It teaches a lot about eating healthy, making good choices, etc. If you pick poor choices you just don't get to eat as much.
