Invented these tonight, I really wanted something savoury, that didn't taste like veg!!
2 tsp oil
3 oz finely chopped raw onion
1 tsp mixed dried herbs
1 tsp chili powder
1/4 tsp garlic salt
3 oz finely chopped raw peppers (I used frozen, defrosted)
8 oz cooked chickpeas (garbanzo beans)
6 oz cooked soya (soy) beans
1/3 cup raw oats
2 Tbsp chopped coriander (cilantro)
Heat 1 tsp oil on medium heat and cook onions and spices, stirring, for about 2 minutes.
Add peppers. Cook, stirring for about 3 minutes, until everything is tender and the mixture is dry.
In a food-processor, blitz the chickpeas and beans. Add the oats, onion-pepper mixture and coriander and blitz again.
Squeeze together into burgers - I made 6: they don't look that big but they're quite solid.
Heat remaining oil on medium and cook burgers for 4-5 mins on each side, until heated through.
I ate one burger with sweet potato 'fries' with yogurt dip (and a ton of brussels sprouts, I'm addicted).
I've just finished Day 5 of P1 for the first time, so I hope I'm right in claiming this as a P1 recipe; I hope someone will let me know if not.
