Hi all,
I'm new to the Beach and the boards... Hopefully this recipe is legal for Phase 1... because now that I've had it, I don't think I can give it up... ;)
I was craving these roasted potatoes that my mom makes & figured I'd try it with good old cauliflower (which I usually don't like)...
Measurements are not exact (sorry)...
-Preheat oven to 425*
-Cut one head of cauliflower into florets (obviously wash it at some point!).
-Toss cauliflower with olive oil/melted butter substitute of your choice to coat. Add a few handfuls of McCormick's Montreal Steak Seasoning and toss some more (I think I used 3 small handfuls for one medium head of Cauliflower).
-Spread evenly in baking dish.
-Roast at 425* in upper and lower thirds of oven, stirring occasionally, until golden, 25 to 30 minutes.
You could certainly put the seasoning of your choice in place of the Montreal seasoning mix - these would probably be excellent with rosemary & garlic or any combo used on potatoes.... Enjoy!
This will serve 4 to 6, depending on the size of the cauliflower of course.
