I found this...honestly I don't remember. I search all over the web for SBD friendly recipes, so it might even be from somewhere on this board... :D
1/2 C SBD-friendly Ricotta Cheese
1 1/2 T Cocoa Powder
1 1/2 T Splenda
1/4 t Mint Extract
Mix everything together and enjoy!! One serving

Made this tonight...so good and cool tasting for a hot Atlanta night. And I never new there was mint extract! I used only a 1/4 cup serving and it was very satisfying. I also added the 5 mini chocolate chips. I hate jello so thank god for ricotta cheese.

Thanks for bumping this one up! I love minty chocolatey things, so I'll definitely try it. I second you on the jello - can't stand the stuff.
Almond extract or instant coffee might be good too!
