This is my own invention,fast and easy. Be sure to use only seasoned rice vinegar in this recipie. It is sweet and mild. (I use Nakano brand.)
BLACK BEAN SALAD
1 cup frozen corn, thawed
1 can (15.oz.) black beans, rinsed & drained
1/2 sweet red pepper, diced fine
1 mediun onion, diced fine
1 jalepeno pepper diced fine
1/4 cup fresh cilantro-leaves only, minced
1/2 cup seasoned rice vinegar. Do NOT use regular vinegar.

Mix and marinate in refrigerator several hours. 6 servings

Default Black Bean Salad

Glad you liked the black bean recipie,mahoneybee, although I do not have the calorie count because I do the weight watcher diet so all that is counted is the beans and corn(which is 5.5points for the whole recipie under the new system). This is a great salad to take to pot luck and everyone raves about it and asks for the recipie.
I am hooked on the seasoned rice vinegar and am posting a onion recipie under Misc. recipies that you might like too.
Everybody out there, give this recipie a try....it looks too simple to be this good and low in points too!!

Thanks, Sturg! I can figure out the calories if I just do the work...haha!
have a good one - I'll look for the onion recipe, too.

I make mine a bit different, but it still works:

1 can yellow corn (or 1 bag thawed frozen)
1 can drained and rinsed black beans (or red beans)
1 small jar of picante sauce or salsa (I like Pace with Cilantro)
Juice of one small lime
1/4 cup red wine vinagrette
1 tsp of sugar

For a kick, add a couple of dashes of good tequilla...

Combine and chill overnight.
