Apple Pancake
Makes 1 pancake
1 Protein/ 1 Starch/ 1 Fruit
1/2 or 3/4 cup egg substitute according to plan
3 slices melba toast crushed
1 small apple peeled and grated
1/2 tsp cinnamon
1 packet sweetener
non fat cooking spray.
Combine all ingredients in a small bowl and mix well.
Coat skillet with nonfat spray and pour mixture into pan. Heat until lightly brown, flip over and brown other side.
This makes one LARGE pancake so use a large pan or make yourself a few smaller ones. Serve with sugar free syrup and count in your condiments
