2 pounds new potatoes, quartered
1 Tbsp minced garlic
1 tsp chopped fresh thyme
1 tsp chopped fresh rosemary
3 Tbsp balsamic vinegar
1/4 tsp black pepper

How to Prepare- Heat large cast iron skillet, coated with nonfat cooking spray, over medium-high flame.
- Add potatoes and seasonings and heat through.
- Remove skillet from heat; place in oven, uncovered, at 425°F for 30 minutes, or until potatoes are tender, stirring occasionally.
- Add vinegar, and toss well.
- Sprinkle with salt and pepper. Roast uncovered for 6 more minutes.
- Serve immediately.
