Chocolate Muffins

Recipe By : Weight Watchers New Complete Cookbook

2 tablespoons unsweetened cocoa powder
1 1/2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1 egg
4 teaspoons unsalted butter -- melted
1 teaspoon vanilla extract

1. Preheat oven to 400 degrees F. Spray a 12-cup muffin tin with nonstick cooking spray.

2. In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the milk, egg, butter and vanilla. Pour wet ingredients over dry ingredients. Stir until just blended (do not overmix).

3. Spoon the batter into the cups, filling each about two-thirds full. Bake until a toothpick inserted comes out clean about 20-25 minutes. Cool in pan on rack for 5 minutes; remove from pan.

Kelly, you mention an egg in the instructions, but there is no egg in the list of ingredients, can you please verify the correct amounts?

Our WW leader handed this recipe out at our meeing on Friday. I just made a batch and they are good - taste like big brownies!

Points
6 - 1 cup whole wheat flour
0 - 2 tsp. baking powder
0 - 1 tsp. baking soda
2 - 2 cups "Kashi Good Friends" cereal
2 - 1-1/4 cup 1% or skim milk
3 - 1/4 cup sugar
0 - 3 packets Sweet & Low **
1 - 1/3 cup baking cocoa
1 - 3 egg whites or 1/4 c. egg substitute
.5 - 1/2 cup unsweetened applesauce
0 - 1/2 cup canned pumpkin or grated zucchini)***
4 - 4 Tbsp. chocolate chips
19.5 Total

Heat oven to 400.

Mix in one bowl - cereal (crush as much as possible), milk, sugar, sweet&low, egg whites, applesause and pumpkin. Let stand 5 mins. or more.

In another bowl, mix flour, baking powder and baking soda.

Add cocoa to cereal mixture. Mix well. Add flour mixture and chocolate chips until mixed.

Spray 14 muffin tins with Pam. Fill 2/3 full. Bake 20 minutes or until done.

Freezes well.

**I did not use the Sweet & Low - used 3 pkgs. of Sugar In the Raw instead.
*** Used the shredded zucchini.

I don't like artificial sweeteners, but if you do, the Sweet & Low would probably make these sweeter tasting. I really liked them without it - the Sugar in the Raw is zero points (for one serving - but 3 divided by 14 is still probably zero).

If you like chocolate, these are worth the effort!

I would love to try these muffins but unfortunately I live in Nova Scotia Canada and we don't have brand of cereal. Could you possibly give me the nutritional info on it and what type of ingredients are in it so I could perhaps find one similar in my grocery store, if it isn't too much trouble. I would greatly appreciate it because muffins are my all time favorite breakfast item and there just aren't any that I have tried that I like for the low points. Most are dry and not taste and to me it isn't worth eating even if they are only 2pts. Hope you can help.

Mary: I live in Canada also. I've found that Kellogg's All Bran Buds are about the same nutritionally as the Kashi. I use it in the muffins I make.

The box says: Per 30 g. or 1/3 cup

Calories: 70
Fat: 0.7g
Dietary Fiber: 13 g.
Carbs: 25g.

The kashi choc chip muffins are wonderful and well worth the effort. Just made a batcha and I cannot believe how filling they are. I had just bought 4 boxes of Kashi cereal and this recipe is terrific. Great chocolate fix. Does anyone have any other 1 point recipes with or without Kashi cereal? I am looking for a ww one that used apple butter in it. Thanks Electricman@tds.net

I made these today. No way was all this going to fit into 14 muffin cups though. I ended up with 20 average sized muffins (didn't want it to poof up all over the place).

They were great, the kids loved them. I loved them.

I used Go Lean because that was what I had in the house.

Next time I will definitely use mini chocolate chips, as I think they would be perfect.

Hi All,
I have tried Diane's recipe and found it to be just OK. I thought the taste of pumpkin overwhelming to the chocolate flavor. Just recently I found a better tasting recipe posted under WW recipes - Desserts: Chocolate Muffin Mix (homemade) 2 pt. - variation- Fat Free Choclate Brownies 1.5 pt.
I made these last week and my husband and son loved them. These two did not care for Diane's muffins and both swear they HATE yogurt in any form. Little did they realize they were scoffing down "yogurt" in these delicious muffins. I used 1 cup whole wheat flout and 1/2 cup white flour as opposed to the 1 1/2 c. white flour called for in the original muffin to increase the fiber and decrease the total points. Also, substituted the unsweetened, plain yogurt for Columbo Lite Raspberry Yogurt for a Chocolate-Raspberry flavor. Check it out, they are well worth trying and very simple to make. Enjoy!

shellyj, I don't have Master Cook, but I have LifeForm and I just input the numbers into that program.

Here's what I get.
For each muffin:
Calories 88
Total Fat 1.4 gm.
Saturated Fat 0 gm.
Cholesterol 0 mg.
Sodium 171 mg.
Total Carbohydrate 19g.
Dietary Fiber 3g.
Sugars 8g.
Protein 3g.

To MaryDave. In place of the Kashi you could also try Kelloggs extra fiber All Bran cereal 1/2 c has 13 g of fiber. I use it all the time in the Cinnamon Bran Muffins I make. That recipe is on dottiesweightlosszone.com in the recipe section of the message board under breads and muffins.

Thaks, katie!. I'll try them this weekend. I need to try them without S&L b/c I don't let the kids have artificial sweetener. Maybe I could just leave the sugar out altogether and the let the choc. chips provide sweetness? Or maybe add dates for sweetness and account for the extra points? Anyway, thanks for the recipe!

MARISA-43 - I pulled up the Kashi website and noticed that there are a few stores in Toronto that carry Kashi products. I'm a couple of hours away from Toronto, but the next time I'm there, I'll be buying a few boxes. It would be closer for me to drive to Michigan, but I'm not sure if, with the currency exchange, it would be worth the trip.

These muffins are yummy. They freeze well and you can reheat in the microwave oven for about 1 min. 15 seconds for 2 muffins on 1/2 power (medium)

Chocolate Muffins

3 Cups Kelloggs Extra Fiber All Bran Cereal
2 1/2 cups water
1 1/2 tsp baking powder
1 box Betty Crocker Sweet Rewards Brownie Mix

Soak cereal in water for about 5 - 15 min.
(I soaked mine 15 min and it was like mush)
Add baking powder and brownie mix. Stir until blended. Do not add any more moisture. Fill muffin cups about 1/2 full.

Bake 350 degrees 20 min. Makes 30 med. size muffins at 1 point each.

24 muffins = 2 pt each.

I was wondering if you could substite General Mills Fiber One instead of the bran cereal. I just purchased one a few days ago and wanted to use it up instead. Do you think it still will come out the same ??

I don't taste the fiber because the brownie mix is so chocolatey. But I am use to eating muffins with bran cereal in them. If Fiber One is a flake type of cereal, I don't think it will work. I don't think the flake will absorb the liquid and make the same kind of mush. The All Bran Cereal is much more absorbant. They are not a flake type, but like a bud. Hard to describe. I just love these and the Cinnamon Bran Muffins.

If you will go to DWLZ.com and go to the Message Board thread. Go all the way to the bottom to the recipe section. Click on Chocolate Recipes. There is a thread pretty near the top by boycrazyx4.

She made up her own muffin recipe cloning No Pudge Brownies and then took my recipe and combined them. Her second recipe on 7/28/01 is the combined one. I have not tried it yet. Hope this helps.

There may be other low fat brownie mixes out there. The nutrition on Betty Crocker Sweet Rewards is: 18 servings from a 9 x 13 pan
Per serving: calories 130, fat 2.5g, fiber 1 g.

I discovered the other day that Betty Crocker has changed the box design for these brownies. Look for Betty Crocker Brownies.
Now look at the bottom strip across the bottom of the package front. There is where it says Sweet Rewards.

Hi Mary Dave! I like in Sydney and we DO have Kashi here, I think Turro would have it, Halifax definately does. If you have a SuperStore with a health food dept try there it's alos at our helath food store here in town. :)

I made these last night, using the canned pumpkin, and they are DELICIOUS! Just sweet enough to satisfy my sweet tooth, but not so over the top sweet that I can't eat them for breakfast.

However, my batch made a dozen muffins, not 20 or 14 as some others here have posted. I wonder what is up with that?
Since the whole recipe has 19.5 points, I've been counting these as 1.5 points each. Still, what a bargain!

I made these chocolate muffins yesterday, however, I did NOT have the Betty Crocker Sweet Rewards Brownie mix on hand. I did have a box of FF Krusteaz Brownie mix which I substituted for the BC brand. They turned out great! I used all the other ingredients as mentioned in the recipe with this exception. Yummy!! Even DH who is a chocoholic thought they were fantastic! :) This is just another way of making these scrumptious muffins.

I went to the store this morning and looked for this brownie mix and didn't find it BUT... I did find Betty Crocker "Carb Monitor" brownies (mix is 80 cals, 2.5 fat, and 4 fiber) I'm thinking if you use apple sauce instead of oil and use a white and 1

I am new here, somebody talk to me about this WONDERFUL site! Yesterday I found your recipe and I was very happy to see a Chocolat muffin recipe at very low "points". I'm doing WW since thuesday night (after my prenancy, my baby as 3 month today!) and i will try your recipe tonight! It look's very YUMMY!!!

I did WW in 2002 after my first prenancy and i became "life member" after 11 months...now I have to get back this;)

Update: I understand there are Betty Crocker Brownie mixes out there now that have about the same nutrition as the old Sweet Rewards had. Just use the mix for the Choc. Bran Muffins but don't add applesauce for the oil or eggs. Just use the dry mix with the ingredients on the first post. i.e. Kellogg's All Bran Extra Fiber Cereal (Gen't Mills Fiber One has the same nutrition as Kelloggs All Bran and the same 'bud' texture so it should work) soaked in water and brownie mix with added baking powder.

In Southern Calif. we have a grocery store called Ralph's that is a Kroger chain. They sell a reduced fat brownie mix.

Here is the muffin and/or brownie mix I posted back in 1999 or 2000- sometimes it will come up in searches and other times it won't, its such an old post. I get request for it every once in awhile, so I thought I would repost again. I rewrote it as a mix, since that is how most people wanted to use it. The regular recipe is below.


Christine's Chocolate Muffins...or Brownies Mix
Dry ingredients:
1-1/2 cups flour
3/4 cup sugar
1/4 cup cocoa
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. Salt
¼ cup powder milk, dry

Put ¼ cup powder milk mix in food processor and process until it is very powdery & flour-like**. Put the processed powdered milk & all the other dry ingredients in a zip lock bag & store accordingly. This mix also makes a very nice 'jar gift' for anyone who is watching what they eat, but still needs a chocolate treat from time to time.


For Muffins:
Additional Ingredients:
2/3 cup nonfat unsweetened yogurt ***
½ cup + 2-3 Tablespoon water***
1/2 tsp. Vanilla

Preheat over to 400F
Pour dry mix into medium sized mixing bowl and add additional wet ingredients as listed. Mix until just combined (do not over mix).
Divide batter evenly in 12 lined muffin cups.
Bake at 400º for 15-20 min.
SERVINGS: 12 muffins; 110 calories, 0 fat, less then 1 gram of fiber, 2 pts each




For Brownies:
Additional Ingredients:
1 cup nonfat unsweetened yogurt***
1/2 tsp. Vanilla

Preheat over to 350F
Pour dry mix into medium sized mixing bowl and add additional wet ingredients as listed. Mix until just combined (do not over mix).
Spread into a 8"x8" pan that has been sprayed with Pam type spray.
Bake at 350 for 16-22 minutes.
Cut into 16- 2" x 2" squares. 85 calories, 0 fat, less then 1 gram fiber, & 1.5 pts each

Baking Notes:
**I process a cup or more of dry powered milk up at a time for various recipes. Using my digital scales, I know 1/4 cup weighs 1/2 ounce. If you don't have a food processor (or clean coffee grinder), you can skip this step- it does help the powdered milk dissolve better when you prepare the batter, but it isn't absolutely critical.
***Yogurt can have different amounts of moisture/liquid from one carton to another. I also end up freezing mine for baking a lot of the time since I don't always use as much as I thought I would before its use by date. If it is very watery, I pour the excess liquid off and save it- add it in if it seems like the batter needs a little more liquid. Sometimes, the amount of water added will need to be adjusted a little too.

Some people tried Splenda with good results- you need some real sugar so I wouldn't substitute more then ½ of the sugar- I would start with ¼ cup Splenda & ½ cup Sugar and see how it tastes and substitute more Splenda until you find the right mix for your taste.

You could also try using some whole wheat flour- I never really played around with it in this recipe & now I can't handle that much chocolate, so I won't get a chance to play with it any more to tweak it.

Non-Mix/Regular Recipes
Muffins:
1-1/2 cups flour

¼ cup powder milk, dry (or substitute 2/3 cup fat-free milk for powdered milk & water)
½ cup + 2-3 Tablespoon water***
2/3 cup nonfat unsweetened yogurt***
1/2 tsp. Vanilla

Preheat over to 400F
Mix dry ingredients in a medium sized mixing bowl and add water (milk), yogurt, vanilla. Mix until just combined (do not over mix).
Divide batter evenly in 12 lined muffin cups.
Bake at 400º for 15-20 min.
SERVINGS: 12 muffins; 110 calories, 0 fat, less then 1 gram of fiber, 2 pts each

Brownies:
