Hello all,

Was looking at some of the recipes and - since I'm new and don't know how to put a recipe in there - I will share it here.

Being from the South - we love pecans. I have found a sweet way to enjoy them with VERY LITTLE carb content.

Here tis'

(2) Egg Whites
(1) lb. Pecan Halves
(2) Tbls. Water
(2) Tbls. Vanilla
(1 1/2) Cups Splenda
(1) Tbls. Salt
(3) Tbls. Cinnamon

Whip the egg whites, water and vanilla until they are foamy (not stiff)
Pour over pecans in a large bowl
Add dry ingredients
Stir Well and place in a single layer on a cookie sheet
Bake in 350 degree oven for approximately 45 minutes or until crunchy stirring frequently.

My husband and I LOVE these. He can eat his way through a lb. in no time. :eating2:

Great recipe, Rayneysmom!

Make sure you stick to the serving size of 15 nuts, though. Nuts are good fat, but have LOTS of calories. Not that I wouldn't be tempted to eat more! ;)

I made these last night and they were great. We all really liked them. I didn't have any problem sticking to the limit of 15 though because they were a little sweeter than what I am used to. Thanks for posting!

I am also from the south and these are sooooo yummy!! My entire family loves them. I do have to watch how many I eat because I can eat way more than 15 if I am not careful!!!

This recipe is absolutely delicious. I only had to bake mine for about 30 to 35 minutes. Could just be my oven though. These are just as tasty as my local mall's. Thanks so much for the recipe!

Ooh, these are good! I was afraid at first that there would be too much salt but it works so well with the pecans. Thanks!

There is a little store here in Georgia called River Street Sweets, and these taste just like - no, even better - than the Pecans they sell. Then, on top of that, they are DIET FOOD!!! I can't believe it! Thanks for the WONDERFUL recipe!
