I made these this morning. They were great. Like someone said in another post, it felt like I was cheating when I was eating it. It taste just like the real thing.




Belgian Waffles


Ingredients:

2 large eggs
1/4 C Lowfat Ricotta Cheese (store brand)
1 T Granular Splenda, more or less to taste
1/2 t. Baking Powder
1/4 t. Cinnamon, more or less to taste
(optional)
Dash Nutmeg, more or less to taste (optional)

Directions:

Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy
pancakes, but that is not as much fun! Beat eggs with electric mixer on high for 1
minute to make them light and fluffy. Add all other ingredients. Beat until smooth.
Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles.

Wanted to let you know these are really tasty. I've made them a couple of times already and they're delicious and filling. I don't have a waffle maker - just make one large pancake. I also use Suzanne Somers' maple syrup which is has 1 gram of sugar per serving (1/4 cup) and no fat.

Vickibart - I'm glad you enjoyed the recipe. It really helped me get through the first week of Phase 1. I made it for my son and he LOVED it. It is 6 yrs old and very particular about what he eats. Where did you buy the syrup?

I have literally just finished eating my pancake version of this recipe. (Waffle irons aren't all that easy to come by in Australia..!)

*WOWZERS*

It was so delicious.

I don't know how much time I'd have to make these before work, but it is such a glorious breakky for a weekend.

I usually make these up in advance (I double the recipe) and put them in the refrigerator. Then in the mornings all I do is take out what is needed, put them in the toaster and Voila. Breakfast is done in no time. Sometimes I will even cook up some turkey breakfast links and put them in the refrig also. Then I will heat 1 or 2 of them up in the microwave to eat with them.

I made the pancake version of this this morning but used cottage cheese instead of ricotta simply because I was out of it. Anyway, I also made it Phase 2 by adding blueberries and had it with fat free cool whip...OH MY GOSH, it was fantastic!!

I just have to say that this is a wonderful recipe! I have made this for many people and everyone says they are really yummy! Really helps on phase 1!

Fantastic recipe!!!! Thanks Golden. I don't have a waffle maker either so I used my square skillet. I cut the pancake in half , mixed some cottage cheese and cinnamon, and filled and rolled the pancakes just like a crepe. Drizzled alittle Atkins syrup on top. YUMM!!! (will try the blueberry and coolwhip soon for DH and me as a wonderful dessert.

Let me tell you I was a skeptic about this waffle! I was so impressed at the flavor and texture! I will cook this again fo sure!!!!!!!!! :cheer:

This was so great! I made it for my dad and I this morning, and it was a special sunday breakfast! It was really easy, and I figured this would turn out better than french toast. The original recipe made enough for 3 belgian waffle squares for me. I discovered this after pouring it all in and having overflow the first time! I'd make this every day- it's a great change from omelets! LOVE LOVE LOVE it! Thanks for the recipe! I'd bet you can even add some cocoa powder as kind of a sub-in for chocolate chip pancakes, and use Atkins SF Chocolate Syrup on it. Yum! New Dessert idea, even!

This is definitely the best breakfast I have had on the beach. I feel so guilty eating it, it's soooo good. I've been eating it every morning. I think maybe the syrup isn't good to eat every day because I actually put on 1 pound this week, anyone else gain weight after eating these more then once?

I have a question about Spleda in recipes. Do the recipes work if you just leave them out? I don't like eating chemically altered foods but wondered if the waffles would still rise even if they weren't as sweet. TIA

Tried these this morning, they were delicious. Just as good as the real thing! Had these with a slice of lean ham. This is a great change from eggs and omelets.

went and got a wafflemaker today...its amazing how resonable they are these days....can't wait to try these! I am so excited...and I'm off tomorrow so the perfect day for it!

aww man...i tried to make this but with cottage cheese. didn't work. hubby decided he wants to do the diet with me and requested them. so i will get up in the morning and buy ricotta instead.

i used a hand mixer to blend the cottage cheese with the eggs but it was still cottage cheesy. maybe it would have worked to blend instead, but i didn't want to wake anyone!

theres a brand called Carey's thats $1.99 Vermont maid also has a version

I find it at just about any local grocery...kroger, walmart, etc...right in the syrup section.

I made this for lunch.. OMG heaven. I made it in my professional waffle maker (the kind you flip over) and the recipe made exactly 1 waffle with no overflowing.

I put SF syrup on it and a tiny bit of whipped cream and OMG...

I've never been a big fan of eggs, but these sounded like something I might like--and boy are they ever good!! Yum yum yum. Today I modified the recipe a little by adding in two tablespoons of freshly ground flax seed for extra fiber and taste, and the waffle turned out great.
