View Full Version : Cheesy "Fried" Chicken

I haven't seen this one posted anywhere, and it's one of my favorites! A great fried chicken substitute:

1 package of thin sliced chicken breast
1 egg, scrambled
1 cup of low-fat grated parmesan cheese


Pre-heat oven to 350.

Dip chicken breast in egg, and coat with cheese. Place in a lightly greased bake pan (I use Pyrex, because nothing seems to stick to it!). Bake for 30-45 minutes (varies depending on gas or electric) or until the cheese is melted and browned. Makes three servings.

I ran the recipe through fitday.com and here are the approximate values per serving:

Cal: 204 Fat: 12 Carb: 1 Protien: 20

An alternative I've seen (but not tried) if you don't like burnt cheese:

In a coffee grinder, grind almonds until you have a fine "flour". Use to coat chicken.

I haven't tried this yet, because I don't know exactly how many almond it would take to coat 1 piece of chicken, and I am hesitant to go over the daily limit (15 almonds).

Looks good. How much chicken? A pound? And how many servings? Four?

I've never seen the thin sliced chicken packaged higher than 1 pound, so yeah, that's about right (guess I should have been more specific :dizzy: ). This is typically 5 to 6 slices of chicken, which, as I estimated above is about 3 servings.
