View Full Version : Lemon Dill chicken (phase 1)

My DH digs this recipe. I throw in lots of fresh mushrooms and artichoke hearts and man it is good!

Lemon Dill Chicken

2 tablespoons of olive oil
2 tablespoons of lemon juice
2 cloves garlic, pressed
1/2 teaspoon dill weed
1/2 teaspoon of salt
2 boneless skinless chicken breasts, halved

Mix oil, lemon juice, garlic, dill weed and salt in a small bowl. Place chicken on rack in broiler pan. Brush chicken with lemon mixture. Set oven temperature at broil or 450 F. Position broiler pan about 4 inches from heat; broil 6 to 8 minutes. Turn chicken; broil about 6-8 minutes longer or until chicken is golden brown and fork-tender.

Serves 4

Sounds Yummy...Do you saute the mushrooms & artichoke hearts. :hun:

Hi Rose, I brown the chicken under the broiler while I am sauteeing (sp?) the mushrooms & artichoke hearts and then normally when the chicken is done I throw it in the big saute pan to put some extra flavoring on it. Enjoy!

Back on topic...do you use the leftover lemon mixture to saute the veggies, or do you use it all with the chicken?
