DECADENT FUDGE BROWNIES
4 grams carbs per serving

1/2 cup unsweetened cocoa powder
1/2 cup ground pecans
2 sticks butter (I Can't Believe It's Not Butter or SmartSpread)
20 - 25 packets Splenda See Splenda Conversion in Cooking Hints.
4 eggs, lightly beaten

Preheat oven to 375
Melt butter
Mix in cocoa, nuts, Splenda, & eggs
Pour into buttered 8" or 9" square pan
Bake for 25 - 30 minutes
Allow to cool for 10 minutes or so
Serve with fat-free whipped cream, if desired

These were great. I made them last night after suffering a chocolate craving and not wanting a sf fudgesicle.

Dh and I ate them, and thought that they were good, then I put them in the fridge because of the eggs - and I have to say that they were even better cold! Like a fudge.

My kids thought they were good too.

P.S. I used regular butter because I don't have the lighter versions of butter.

All phases. But I added the following info. from someone else's post, and they turned out better:

"I would recommend adding a capful of vanilla extract, as was suggested on the recipe exchange board. Also, it helps to melt your butter sub over the stove, then add in the splenda and cocoa and mix over heat so the cocoa melts in well with the Splenada and you don't have lumps of unsweetened cocoa in the resulting Chomelette. Let that cool a bit, then add the eggs (so's you don't scramble 'em)."

i tried making these, but i also added about 1/4 cup fat free cream cheese. they were amazing.

I've made this twice. The second time I kind of tweeked it to resemble a "fudge pie" recipe I received years ago from a friend. I added 5 more packets of splenda, 1 1/2 tsp vanilla 1/2 bar (1/2 ounce) unsweetened chocolate and I stirred the batter after each egg addition. It made it quite smooth. I melted the ICBINB and unsweetened chocolate bar together, added the splenda - after blending that I added the cocoa and stirred, vanilla and then the nuts (really ground), then the eggs - one at a time. I hope you enjoy it.

The same size as a regular brownie. 16 per 8"pan although I cut mine into 20.

I am confused about how this recipe is in any phase...I have been eating these for awhile, but I just read in the South Beach Good Fats Good Carbs Guide that the butter sticks are not allowed. You can have the spray, but the sticks are bad for you in all three phases. Am I reading the book wrong??

becod9, you are right, that is why the recipe contains the alternate of ICBINB or Smart Balance as substitutes...

Schatzi, Sorry I said it wrong. What I meant to say was that the book says you can only have ICBINB Spray and that the ICBINB sticks are to be avoided in all three phases. So how are the brownies OK? I don't see the Smart Balance in the book so is that the same as ICBINB?

Usually the hard and semi softs contain trans fats and /or hydrogenated oils and higher amount of sat fat. Smart Balance is a lot like ICBN.. The heart healthiest brand appears to be Benecol that uses plant derived esters that reduce cholesterol. My only thought is that based on a serving size, the amount of butter substitute wouldn't be too significant... just my 2 cents ;)

16-20 servings! Oh Boy, no wonder my weight loss is so slow-last week my husband and I finished off the pan in three days!!!!! ooops.....I think I'll stick to SF fudsicles and the peanutbutter cup dessert until i lose about 10 lbs and then I will trust myself to only eat 1 serving a night!!

How many peanutbutter cookies can you have in one sitting?I usually have 3....or 4. (the peanutbutter, egg, splenda cookies)

I think the reason I have failed in the past is due to serving size of desserts-it's my weakness-if I know I can have it (it's "allowed" on a phase, I'll eat too much of it!)

When I lost 25 lbs last year, I only had sf popsicles, fudgsicles and the peanut butter cup for like 2 months....I did really well for 6 months, lost 25 lbs for my wedding by April 2005.....and I spent this last 12 months since my wedding gaining every pound back! so frustrating! I have just started week 2 of phase one and will weigh in on wednesday t see how week one went...wish me luck!

Becod..darlin, I feel yer pain... I suffer from Portion Distortion... and PB is limited to 2 TBS a day..so you need to figger out how many of them cookies is a serving... I personally have a problem with nuts .cake and coooookies sooo dem cookies would be a double whammy fer me! So I do a natural PB tablespoon with lf cool whip as a dessert once in a while, and eat sf jello or fudgicals on phase one :shrug:
