Default Questions for the Bakers

I am making 2 pies - pumpkin and sweet potato/pecan.

Here are my questions -

If I make today, do they need to be refrigerated tonight?

Are either/both better cold or warm?

Can either/both be frozen?

Here goes, though I kind of gave up baking pies ...

I'd refrigerate them. Most pumpkin pies are really a kind of custard, with dairy ingredients. I don't know what your sweet potato pie recipe is, but I'd imagine that also would keep its shape better if kept cool overnight.

I think these pies are better slightly cool, or room temperature, rather than warmed up.

The sweet potato pie is not in my family tradition, but in my oldest friend's family, it is, and she always brings me a slice. I have indeed successfully frozen it before. I have not attempted to freeze pumpkin pie, but I've seen frozen versions in stores, so I think that can also be done.

I don't bake much anymore but even though in our house at night it is very cold, I'd probably still refrigerate them. As to better warm/cold ...depends on the person. I like them either way. My dh prefers his pie cold. I haven't frozen a pie, but don't see why you couldn't. They sell frozen pies.
