As JG said, it absolutely can be done in a healthful way. There now is also research. It turns out all the fears about low carb dieting just aren't justified. It has been compared to low fat diets and cholesterol levels measured, and patients followed for heart attack and stroke. It's been awhile since I read these papers but my recollection is that they found that weight loss was about the same, no significant differences in cholesterol levels and in the 1 year follow up, no significant difference in heart attack or stroke rates. If you want actual references for you, I can get them-yes, from respected, peer reviewed medical journals.
There is no proof that low carb decreases heart disease as there is for the Mediterranean diet but currently there is no evidence that it is less safe than low fat dieting either.
