Exclamation Recipe of the Day: Crockpot Mixed Beans and Turkey Ham

Hi all. I know I've touted this recipe before, but I just wanted to post it again for all our newbies. This is my absolute favorite way to have beans. I don't know what it is about it, but I find it SO yummy. I like that you don't have to soak the beans overnight. Gotta love the crockpot!

Crockpot Mixed Beans and Turkey Ham

Serving Size : 6

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup dry beans -- black and white beans are good
water
3/4 cup carrots -- diced
3/4 cup celery -- diced
3/4 cup onion -- chopped
1 1/2 cups turkey ham -- chopped
2 cans fat-free chicken broth
1 1/2 tablespoons parsley flakes
1/4 teaspoon thyme
1/2 teaspoon baking soda
salt and pepper -- to taste, after beans are cooked

In a crockpot, throw beans in and enough water to cover (should have a clearing of 2" over the top of beans.)

Cook beans on high for 4 hours in crock pot (or till beans are tender.)

Drain.

Add remaining ingredients and cook 2-3 more hours till done.

Add more water if needed.
