This has a wonderful taste even if you don't like zuchini!
Sliced zuchini ( depends on how much you want to make. two small ones or half a big fat one!)
sliced tomatoes ( same amount as zuchini and onion)
sliced onion ( same amount)
parmesan cheese (about 1/2cup)
Slice the veggie to the same thickeness. In a pan sprayed with cooking spray, layer the zuchini, onion, tomatoe, and parmesan. Zuchini, onion, tomato and finish with the cheese. Salt and pepper if you want - I do!
bake at 350 until the veggies are soft and the cheese is golden.(1hr) The flavors really mix and the tomato gives it an almost sweet taste.
