Grating cauliflower is not easy. First I tried doing it with my regular grater, but had to switch to my mandoline because I thought I would lose a couple of digits. Even then it was difficult and messy.
Perhaps I did something wrong. I didn't care for the final result. *IF* I decide to try this again I will brown the "rice" in a nonstick pan separately and add it to the stir-fry.
I would only recommend this to those people who have a rotary drum grater that can cut the cauliflower correctly and still have fingers to eat it with.

The weekend is a little harder for me.
Breakfast- egg/mushroom/onion/cheese on a WW tortilla
Snack- zucchini slices dipped in hummus
Lunch- Black Beans, LF sour cream, RF cheese, guacamole, tomatoes, salsa over lettuce
Snack- ham and cheese rollups
Dinner- Chicken Capri and cabbage
B. A leftover Italian sausage in a whole wheat roll plus coffee
L. A pizza made on a pita - tomatoes, feta, black olives, basil - plus a sf ff yoghurt
S. Hummus and pepper strips
D. I think we are going to The Club for rack of lamb I promise to eat better tomorrow!

Breakfast: Coffee 3/4 Special K low Carb Lifestyle ( ate it dry)
Lunch??
Dinner?? ( birthday party, hopefully I will stay on track. Btinging veggie platter just in case)
SAT- low carb pancakes, eggbeaters, and bacon with coffee. Bite of toffee brownie with skim sf vanilla latte. Whole wheat pasta with spicy tomato sauce, chicken, veggies, fried calamari, and bit of bread with olive oil. Glass of wine, 2 jack and diet cokes.
SUN- tea. Grilled cheese sandwich on white :-( and tomato cream soup with diet coke. Yoplait Ultra yogurt and iced tea. Dinner undetermined.
