Thumbs up Grilled Green and Yellow Squash with Basil

I tried this one out last night. It was wonderful!

2 medium zucchini, trimmed and cut diagonally into 1/4" slices
1 medium yellow squash, trimmed and cut diagonally into 1/4" slices
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons basil paste
1 tablespoon chopped fresh parsley
2 teaspoons fresh lemon juice
1/2 teaspoon grated lemon rind
1/2 packet sugar substitute
metric

1. Prepare a medium grill or heat broiler. In a large bowl, combine zucchini, yellow squash, oil, salt and pepper. Toss to coat.

2. Grill squash (in batches, if necessary) 2 to 3 minutes per side until lightly charred and just tender. Transfer to a large bowl and toss with basil, parsley, lemon juice, lemon rind and sugar substitute.


Serves 6
2 grams of carbs per serving (minus the fiber)

I was watching the low carb gourmet on the Food Network this morning and he was grilling portobello mushrooms, green and red peppers, yellow squash, zucchnni, thick sliced red onions. He drizzled with olive oil, salt (coarse) and pepper and balsamic vinegar. Then grilled. After grilling, he drizzled again with the balsamic vinegar. This sounds so much like your recipe and I think they both sound absolutely wonderful. Yum!

By the way, Star Princess, I've also copied your Poor Man's Lobster and can't wait to try it. Probably tonight. After looking at your recipes, we seem to have the same food taste. Keep those recipes coming. lol.

I tried this last night it was awesome.I been trying to add more veggies to the diet.I been trying alot of the diferent recipes they have all been great .I loved Carne Con Chile by Jennifer 3FC I make tha at least once a week lol.
