This is a great Southern recipe. It can be used with a crockpot or a regular pot. Get a bag of peanuts and some cajun seasoning. Put peanuts in crockpot/pot cover with water. Add a lot of season. The more the better. Cover and Boil and then reduce to low. Cook on low for a minumum of 12 hours. The peanuts should be soft. They can stay cooking on low for up to 3 days. Enjoy.
My dh makes a chinese version of boiled peanuts. It's with fresh, young peanuts. Boil them with soy sauce, a few star anise or a little 5 spice powder and some salt. They are pretty addictive. Like a bag a potato chips.
