Canned fish. Or canned chicken if you are in a pinch.

Thanks Ian! I'm becoming more of a canned food kind of gal. Obviously sodium can be an issue, but the rest of my diet has become so low in sodium, that it doesn't seem to be an issue.

And there are low sodium varieties which I am getting into.

But they often cost more...

One of my favorite foods is using canned spinach (well-drained), dumping it in a pan, then scrambling a few eggs or egg whites with it. This is a citified version of the "poke salad" I grew up enjoying in the country. Healthy -- easy -- and CHEAP, lol! In fact, I had some at lunch today --

What a great suggestion Lizzy. I think I'll try that out this weekend, seems fail-proof for me!

I'll let you know how it goes!

Yeah, canned spinach is good. As are eggs. Don't be afraid of the yolks.
