OMG YUM! I made a single-serve portion, just estimating 1/4 of the posted recipe: 1/2 a bell pepper, 1/4 c. onion, 2 cloves garlic, 100 g meat, probably too much lemon juice but that made it extra good .

I made my vegetarian - used "chicken-style" seitan, which was weird, but the dish was still really good.
Mini-goal #2 (ala Beck Diet Solution): Lose 5 pounds again. Start date: July 15. Mini-goal #1 took ~75 days.
Diet: Low carb-ish, mostly whole foods and mostly vegetarian
~~~~~~Exercise: Repeating C25K AGAIN + yoga + walking
