You know the spinach dip on every Knorr and Lipton vegetable soup packet? I love that dip and often make it or a slightly lighter version by cutting the mayo and using light sour cream.
Last time I made it, I forgot the spinach, so I used a 15 oz can of collard green, draining and squeezing out the extra moisture in a seive.
I was afraid the dip would be weird, but it was amazing. So good I think I'll make it for our family Christmas party (no vegetarians).
For vegetarians you'd want to check the ingredients as the greens I used were seasoned with turkey broth.
