Whats for Dinner?
With warmer weather upon us, I thought It might be fun & helpful to post our favourite warm weather dinners we are enjoying.
On tomorrows menu for me:
Small Sirloin Steak (bbqed if the weather holds)
Sided w/ a mock potato salad (using caulifower) &
Cucumber & Tomato Salad w/ balsamic vinegarette

Chicken Fajita salad! Seasoned grilled chicken breast, fresh pico de gallo, fresh guac and fresh salsa all over romaine lettuce.

Marinated and grilled chicken breast
Grilled veggies
Brown rice
and maybe even a side salad!

While my family had burgers last night, I took a black bean burger and crumbled it over salad. Oh my, so yummy! I made another one for today's lunch !

Taco Salad.... YUM!
Seasoned lean Ground beef
Dices tomatoes
Sliced Jalapenos
Romaine Lettuce
RF Cheddar
Salsa (I use homemade) and a drizzle of ranch (or sour cream if you prefer)

Yummers!
I just LOVE "pulled pork" with franks, nice and spicy... then topped with some cool, creamy coleslaw
Damn fine, even with out the bun.

For pulled pork I use a spice rub on a pork loin, leave it in the crock pot all day and make a little extra sauce at the last minute. Guess I should post the recipe.
