I love salads! Right now since my husband has a big PT test coming up soon we are eating grilled chicken salads every night for dinner!
But my staples for salad are always a little bit of spinach, two cups of hearts of romaine lettuce, one to two chopped green onions, black olives, green or red peppers, some type of fruit (or two!), spices such as garlic powder and onion powder, and I cook one boneless chicken breast with spices and one tablespoon on low sodium soy sauce, which I split between my husband and I. It is soooo delicious! Occasionally I will toss in real bacon bits, at 25 calories per tablespoon. And I use either shredded mozzarella or parmesan for the cheese, with a little bit of ranch or no dressing if there is a lot of fruit!
