Everyone is different. Some people don't have big losses at all on the first couple week, and like you some don't have a loss at all on week 2.
You look like you are following the plan according to the phase 1 sheet, but I think most men actually do 4 packets. Check out the men on IP thread, and I'm sure you will get some great advice.
You should up your water for each cup of coffee you are drinking.
