I have made something similar to your recipe before though no greek yogurt... Still sooo good and your recipe's not even 250 cals?! Niiiiice.
I don't know if you like stuffed french toast but in case you do, try a tbsp or two of your favorite jam/preserves in between the bread slices like you would a sandwich then dip in egg/milk mixture and cook as you normally would, maybe a bit longer to ensure it's fully cooked inside.
