Hello everyone! I am on Day 3 of IP for the first time. Man, it's hard. But I've already lost 3.5 lbs so am really trying to hang tough.
I tried the lemon pudding yesterday and had to throw it out after one bite. I hated both the flavor and texture. My coach gave me a whole bunch of puddings in my "starter pack," and now I'm inclined to return them all.
Unless . . . is the lemon flavor the only icky one? Should I give any other flavors a try? I did the cold water and shake thing -- any way to improve texture? Or do I just not like puddings and should give up on them?
I traded in all of my puddings after the first week. I'm just not a pudding fan. That said, I bought a few packets of the Dark Chocolate Pudding today specifically to make muffins. They were great!

I hated the lemon pudding and threw it out. To vanilla pudding I add vanilla extract or orange extract. To the dark chocolate pudding I add vanilla extract, cinnamon, and a teaspoon of chipotle chile in adobo sauce (the minced variety from the can).
I haven't tried the lemon pudding yet. I bought the chocolate pre-made pudding and I quite like them. They are definitely thicker then regular pudding but that's partly what I like about it.....almost seems like icecream
How do you make the muffins??? I tried searching the recipe archives but must be doing something wrong . . . do you use egg whites???

Yes, egg whites, baking powder, olive oil. I added a bit of WF chocolate syrup. I don't have time right now to search for the thread but if you put 'egg whites baking powder olive oil' in the search you should find a bunch of threads with recipes.
Overall, I like the puddings MUCH better if I put them in the freezer for about 20-30 minutes after I mix them up. Chilling them seems to take away the gritty flavor.
The pudding cakes are good, too...I'm just too lazy to make them sometimes!

Not a pudding fan either! Tried the chocolate, vanilla, and butterscotch and couldn't finish them. I won't touch the lemon pudding. I'm sticking to the drinks now. I love the Peach Mango drink!

I really like the lemon made into pancakes and then either the WF maple syrup or their blueberry syrup to top it off.
The recipe: Non restricted pudding Pancakes
1 IP Pudding Packet (I used lemon and it was perfect.)
2 beaten egg whites
Approx 4 oz of water
1 tsp of vanilla extract
Pinch of baking powder
Pinch of sea salt
1 Splenda, Truvia or other sweetener packet (optional)
Directions:
1. Pre-heat griddle or skillet.
2. Beat egg whites with a pinch of salt.
3. Mix all other ingredients. The batter should not be runny but a nice consistency to pour onto the griddle/skillet
4. Cook until brown on one side and then flip.
I agree that the puddings are gross -- even the drinks are tough for me, so I buy the pre-made puddings and shakes -- so much yummier.
But for the packets, bake 'em up and anything is bearable, and usually even good!
1/2 tsp baking powder, 2 eggs worth of egg whites, your olive oil if you want, your salt if you want, any flavours you want, and water to the consistency you need. If you want cookies or muffins, a bit thicker and spread them on the parchment paper. Crepes or pancakes, a bit runnier. Usually 8 min at 350 for cookies.
Remember if you let the batter sit a few minutes it does thicken up if you add too much water (or not enough LOL)
I'm a 'pinch o' this' kind of cook and rarely measure so I apologize. However, I rarely have messed up the baking.
(However, I have rarely made a good batch of 'chips' from a veggie. Not my forte for sure)
I like the milk chocolate pudding. I put it in the freezer for a little bit to get it super cold. It satisfies my sweet tooth. I hated the banana pudding.
