So my gentleman and I went to the grocery store last night and as we were wandering through the aisles figuring out food for the rest of the week, I had an idea. Homemade pizza!
We looked around, and found the ingredients (of course checking nutrition facts along the way). Then, today, we were on a drive, and he suggested stopping to pick up produce for our awesome pizza, which, was an awesome gesture in itself.
So, tonight, we're going to spend the evening making, baking, and enjoying a healthy homemade pizza free of grease and gunk. Yay! Bonding time and food. I love it!
Anyone else make their own pizza? Or maybe another special diet-friendly homemade food?
Yes! I love homemade pizza. My favorite is homemade pesto, arugula, shrimp, red onion and a little of whatever cheese I have around. I make the dough so I know the calories and can make the crust quite thin.
Mmm. That sounds delicious! I think I'm going to look for a whole wheat dough recipe too.
I can't believe I didn't think of pizza before today though. Homemade makes the difference! I just figured pizza was something that I couldn't/shouldn't eat.
That's funny - I just planned a home-made pizza night for tomorrow! I've made them before, and it's great fun. I do find my bases gets a little soggy from the sauce, though - I've heard a pizza stone would help with that.

I make pretty much everything at home. Tonight I baked a high fiber tortilla shell into a taco bowl and filled it with romaine, turkey taco meat with homemade taco seasoning, a mixture of sauteed onion/black bean/corn, chopped tomatoes, shredded sharp cheddar and monterey, avocado, cilantro and scallion with a Greek yogurt/milk/salsa dressing and served it with sliced limes to squeeze. Taco bowl!

The pizza turned out awesome. I sauteed some onions, mushrooms and peppers to put on top. Very filling! I'm definitely going to do this again.
There is a place near me that does a chicken and spinach pizza with garlic and a little white sauce and fresh squeezed lemon. That's my next pizza plan. My new pizza stone has been in my trunk for almost 8 months
All these ideas sound sooo good. I'm thinking next time I might try to do a bruchetta pizza. There's an awesome produce stand nearby with some fantastic tomatoes. Pick up some fresh mozzarella and basil. Yum yum!
