Well, I am in Week 18 now...my first 2-3 week menu was not very impressive. Seriously though, there are some great recipes out there that make this "diet" totally doable and totally delicious. Even my husband has said we have eaten some of the most delicious stuff (he is not IP, nor needs to be @ 6'4" and 225lb). Try out some new veggies, and I know the recipe threads can be overwhelming, which is why I think this daily menu thread is good to follow and see how folks are eating. Post up your day and if you see something you like, ask for the recipe!
I learned to make a lot of stuff in big batches, stored in the fridge. And microwaved rhubarb with WF strawberry is the most delicious "fruit fix" in 5 minutes. Being prepared is something that has helped me out a lot...when it's ready to go there are no excuses.
