Talking I feel rich today!

I just went to Aldi's and did some grocery shopping today. For those of you who don't have Aldi's, it's a bag-your-own discount grocery store with cheap prices.

I loaded up on really good food, things like boneless/skinless frozen chicken breasts for $1.68/lb, fresh green peppers 4/$1, canteloup for 88-cents and all sorts of other other fresh produce. I bought canned veggies, beans, tortilla shells, salad...All of the stuff we've needed to have on hand in order to eat AT HOME and not just fall back on ordering pizza or stopping somewhere.

Best yet, I only spent $55 and, with the exception of staples like milk and bread, this is enough food to last several few weeks for Howie and me. Wooo-hoooo!

** ahem. **

However, now I actually have to COOK it, though... I figure 'll make up a mess of stuffed peppers and freeze them individually for easy reheating. I might also make up a pot of bean soup with chicken and freeze that.

Counting my blessings today!

Yum! Sounds great! Why did I have to marry a man who doesn't like stuffed peppers?

They turned out good, too. *__SLURP!_* I used ground turkey and grated parmesan cheese instead of cheddar or mozerella, and used extra rice to stretch it both in quantity and in fat/calories. I had enough of the stuffing left over I froze it to make six more peppers later. Who's hungry for some good not-so-fattening home cookin'?
