I made zucchini chips the other day with cinnamon and splenda. Very tasty. I preheated my oven to 200 (europe), probably 350 american temp.. Slice the zucchini on a grater (mine has a blade)/mandolin. I put the slices in a plastic bag and sprayed in some olive oil,shake them about to coat each slice. I then put the slices in one layer onto an oven tray lined with baking paper. Sprinkled on cinnamon and splenda. Baked for about 20 mins. Keep checking so they don't burn. It is still a work in progress I don't have much luck getting them all crispy at the same time. But, I eat them anyway. I also make these chips with garlic powder, chill powder and salt.
