Default Mock Oatmeal

Mock Oatmeal

1/2 C. Ricotta
1 pkt splenda
1 egg
1 cap maple flavoring (maple extract)

Mix, cook in microwave for 3 minutes. .

I like to add some pecans or walnuts, or a dash of SF Maple Syrup - depending on my mood.

I doubt it would work with cottage cheese which would not microwave well.

I was pretty skeptical before I mixed the ingredients. It just looked like it would not taste that great, but it was delicious. I used 1 eggbeater instead of an egg and SF maple syrup. I'm impressed--yet another great recipe that I've found on here!

Started back on the SBD after being off for 5 years. I'm still in Phase 1, since this is only my third day. I'm already sick of eggs so decided to try the Mock Oatmeal. It was wonderful. Even my husband liked it. I'm thrilled that I will have another addition to my mornings.
Anyone else have any suggestions for something a bit different, I'd love to hear them.
to whomever thought up the Mock Oatmeal!

I might try this... it sounds interesting... I have been looking for more breakfast ideas...

**one that I have is Cottage cheese with almonds and cinnamon tastes really good!

I know this is an old recipe but I am back on the beach and made this today and while I didn't hate it I do not see how it is like oatmeal at all. I will call it a cheesecake before oatmeal. that said, it was a filling protein-packed breakfast. I added some SF maple syrup both in it and drizzled some on top. trying to think of ways to improve this, maybe a bit of cream cheese and call it cheesecake? definitely eggy...

Made the mock oatmeal just now. I used 3 packets of pure via, used egg beaters and added 1/2 T of chia seeds for fiber. Then I added a little almond extract. It looked weird from the chia seeds but tasted yummy. As others have said, it tastes nothing like oatmeal but it does taste good. Not eggy at all to me.
