Talking Meatball Casserole

Meatball Casserole
Another Carb Options Recipe

1/2 small white onion
2 cloves garlic
2 T. olive oil
1 lb. ground sirloin
1 egg
2 T. grated parmesan cheese
1 T. dijon mustard (check ingredients for no sugar)
1 1/2 T. dried parsley
1 1/2 t. dried oregano
1/4 t. salt
1/8 t. ground black pepper
1 jar (26 oz) Carb Options Garden Style sauce (or another no-sugar-added pasta sauce)
1 8 oz. pkg fat-free mozzarella cheese

1. Preheat the oven to 350. In a food processor or mini-chopper, chop onion and garlic medium to fine. In an 8-inch skillet, heat olive oil over medium heat and cook onion mixture, stirring occasionally, 5 minutes or until onion is translucent. Remove from heat and let cool completely.

2. In a large bowl, combine onion mixture with remaining ingredients except the pasta sauce and cheese. Shape into 20 (2 inch) meatballs.

3. In a 13 X 9-inch baking dish, arrange the meatballs. Bake 25 minutes; pour sauce over meatballs, then sprinkle with mozzarella cheese. Bake an additional 10 minutes or until meatballs are thoroughly cooked. Remove from over and let stand 5 minutes before serving.

This makes GREAT leftovers for lunch the next day. DH thought this might have to go on the top of his favorite dinner list.

Smile meatball casserole

Made this meatball recipe for dinnner last night. My husband and I both enjoyed it. I used a cookie scoop to measure/make the meatballs. I ended up with 24 nice sized meatballs. Worked out well, we each had 6 meatballs and now I have enough for another meal this week. Thanks for the great reacipe.

I made this the other night and Delish! Couple tweaks. When I sautéed the onion and garlic I added some basil ( dorot frozen basil cubes). I also added fresh basil when mixing the meat and took out the mustard and oregano. I love basil! I also poured off some of the fat before adding the sauce and cheese. I used 96% ground beef as well. Yummy!

I made these two nights ago and my husband said after the first bite, "Make this again!" It's a winner! Thanks for the great recipe. My two changes: using ground pork and worcestershire sauce instead of dijon mustard.
I rely on great recipes like this one from this site daily to keep us on our eating plan. Thanks again!

Made this tonight and it was yummy! Wish I had thought to buy myself spaghetti squash though! DW can't eat it but I can I made larger meatballs so I only got 9. 2 per serving though (with a 3-fer for DW last night). Thanks again for posting...
