I'm actually gonna use this thread to keep track of my meal plan for the week. I don't plan out what days we're eating which dishes, but during the week I'll be eating...
Suppers
1. Greek salad with butter beans.
2. Zucchini, tomato & red lentil curry. Sauteed kale.
3. Black bean burgers, roasted cauliflower & swiss chard.
4. Zucchini & white bean fritters on green salad.
5. Creamy crockpot mexican casserole (no chicken no corn, double beans, with a small spaghetti squash mixed in) in lettuce boats
6. Portobello mushroom steak topped with spinach and goat cheese. Green beans. Kale chips.
I need to try that garlic and greens soup. That's why I love this thread
With DW in the hospital I don't do much cooking, but I did cook a little tonight. I've become addicted to roasted cabbage thanks to Kalyn. How did I not know I could roast cabbage I had that and a Gimme Lean burger with rf provolone. Not exciting but better than I was doing.
Shelflife I really appreciate your recipes. Will try the portobello one this weekend, will have to go shopping for ingredients. Thanks

As beautiful as the portabello steaks looked, and as tasty as the marinade was, I just don't like the texture of mushrooms. Im hoping after a few more tries I may grow to like them because there are so many great ways to use them!
I think we will try the zucchini and white bean fritters on mixed greens tonight with tahini dressing. I'll skip the agave nectar in the dressing and throw in a packet of splenda if I think it's missing sweetness.

Well for me, on my first day back on PH 1, I had grilled chicken breast topped with a smear of low cal mayo, chopped cilantro and topped with shredded parm warmed under broiler till brown, with baby broccoli and SF jello for dessert. It was not the recent holiday fare I have been indulging in, but it was clean and felt good in my belly!
Can't wait till the first week passes here and the "I want sugar" passes!
I've gotten as far as planning tonight and tomorrow night. I haven't cooked much since DH left last week, so the kids are ready for some real food, I think.
That garlic and greens soup does look yummy. Maybe with cauliflower in place of the potatoes. Shelflife, I've been trying to convince myself I like mushrooms for years. I think at almost 50YO, I need to accept that there are a couple of veggies I'll never warm up to.
I just wanted to say that I saw this a few days ago and made it today - oh my GOSH it is sooooo delicious! Way better than I expected and yes, I do think it was BETTER than tuna salad (I still eat fish so I do eat tuna salad sometimes). I left out the carrot and added a dill pickle instead of sweet relish.
I just had a tasty dinner! I made bbq chicken pizza.
I cooked a chicken breast in no sugar bbq sauce all day in a crockpot. Shredded that, and put it on a cauliflower pizza crust along with caramelized red onions, a little bit of shredded gouda and shredded lf cheddar cheese. It was awesome!
Shelf, your recipes look so good! I may try the Better Than Tuna Salad for lunches next week! Mmmmm!!!
This was my first time trying the better than tuna salad and I was blown away! Like Emma I left out the carrot and added a pickle. I think you could get away with using 1/2 to 2/3 the called for vegenaise, and I didn't think the walnuts added much either.
