Fibre is healthy, but living on the toilet is not healthy. Cut back to where you were at before in terms of wholegrains, then add a small amount. Give it a week, try adding a little bit more. If you get diarrhoea again, cut back. Not everyone can tolerate high levels of fibre, especially if they have Irritable Bowel Syndrome or other gastro-intestinal problems.
As for carbs, if you don't have any problems with carbs in general, then stop worrying about them. You can do this diet or a low-carb diet, but you can't do a low-carb version of the DASH diet. It looks like a healthy diet to me and a perfectly good one to try, provided you work with your bowel tolerance.
