I'd imagine tofu would work in there as well.
I'd vaguely heard of konnyaku but I hadn't realised it was calorie-free. What's it like? I can't really imagine a food that is calorie-free, let alone one being pleasant to eat! On looking it up, apparently producing it involves eggshells, so as a good little vegan I won't be eating this myself, but I remain intrigued to hear other people's experiences.
