Yummy, Yummy, Yummy!
Thank you for all the suggestions! This is what I did.
I sauteed some frozen seasoning blend which is onions, green & red bell peppers, and celery. I added some water, 1/2 teaspoon curry powder and a packet of Herb Ox sodium free chicken bouillon. I cooked this for a few minutes. I sliced 2 large zucchini and cooked it in the above mixture along with some chopped tomatoes. It started thickening up. I tasted it but decided it needed some more curry powder. I sprinkled some more of the curry powder over the mixture. The zucchini wasn't ready yet, anyways, so I was able to cook the curry powder down some. It was so good.
Since I am the only one that ate it, I have some left over. I already have some cooked zucchini and tomatoes in the refrigerator for my omelet tomorrow. I combined both of them in one bowl and will add to my omelet tomorrow morning. I eat zucchini/tomato omelets on a regular basis so this won't be unusual for me. Although, I have never had an omelet with curry.
