1 pound green beans, trimmed
2 oz. feta cheese, crumbled
10 large basil leaves, chopped
1/2 teaspoon Dijon mustard
1 tbls. red wine vinegar
3 tbls. olive oil
salt and freshly ground pepper to taste
Steam the green beans in a steamer until tender.Place in a bowl with the feta cheese and basil. Whisk the Dijon mustard, vinegar, oil, salt and pepper in a small bowl. Pour over the green bean mixture and toss.
