Default Spicy Summer Stew (vegan)

The weather here in Ireland has been a bit cold and rubbish of late, more like March than June! So, yesterday I got lots of lovely veggies at the greengrocers store and decided I would whip up something that would be warming and satisfying...and here it is....Hope you like it!!

1/2 Butternut squash, peeled and diced.
1 Red onion, chopped roughly.
1 Red pepper, chopped.
1 Courgette (zucchini) chopped.

(Take all the above veg and drizzle with olive oil and roast on a low-medium heat for 25mins. approx 190c)

While you are roasting the veg you can crack on with the sauce base.
3 Cloves of garlic
1 Carton of tomato passata (you can use canned tomatoes if you wish)
1/2 tsp tumeric
1 tsp paprika
1/2 red chilli, finely chopped
1-2 cup of beans (I used cannellini and butter beans but will work with any kind)
3 big handfuls of spinach.

Lightly fry garlic and chilli in a large pot, slowly add the passata and stir in the beans and spices. Simmer for a few minutes and add the spinach & roast veg. Leave to cool a little before serving with crusty bread/rice etc. YUM!

That sounds so delicious! We've had an unusually cold, rainy spring here in California but then summer came roaring in this week so it's suddenly almost 100 degrees (about 37.5 C I think). But I like hot food even in summer, especially if it's spicy.

That really sounds delicious! I'm going to have to try it Turmeric helps with inflammation and I've been wanting to try it but didn't have any recipes. I SO want to go to Ireland sometime. I have Irish ancestors and I've always been fascinated with the country. Maybe someday (sigh)
