I make the Salsa Baked Chicken and Crack Slaw very often for dinner. Taco Bake is my favourite "take to a party" dish. See the Phase I Entree section.

I make the Deep Dish Spaghetti Squash Pie quite often, and also the Butternut Squash Lasagna and the Taco Bake. I also use a lot of the soup recipes, as they're fast and easy.

THIS IS FABULOUS ON THE GRILL FOR DINNER. I buy the thick cut chops and save half of one for lunch for my husband and I the next day on a salad with an easy ginger dressing. You can mix fresh ginger dijon mustard and olive oil together with a splash of water for the dressing.

Serves 2

Ingredients
Grill up chunks of fresh vegetables alongside these lip-smacking pork chops for an irresistible outdoor feast. Bell pepper, sweet onion, and zucchini would work quite nicely.

2 boneless center-cut pork loin chops, trimmed of all visible fat
1/2 tablespoon light soy sauce
1 teaspoons minced garlic
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Fresh herbs, for garnish

Instructions
Sprinkle the pork chops all over with soy sauce, garlic, paprika, salt, and pepper. Cover and refrigerate at least 20 minutes or up to 2 hours.

Coat a grill rack or broiler-pan rack with cooking spray. Preheat the grill or broiler.

Cook the pork chops 4" from the heat, turning once halfway through cooking time, for 10 to 12 minutes, or until a thermometer inserted in the center of a chop registers 155°F and the juices run clear. Garnish with the herbs.

Recipe from The South Beach Diet Cookbook.

I'm hoping to pick up some ideas since I find myself going to the same recipes over and over.

My favorites:

Taco bake
White chicken chili
chicken and spinach casserole
Cauliflower soup (a thicker version of the cheater Alfredo sauce recipe)
Red lentil dal
Breakfast fritatta cups - I've eaten these for breakfast 80% of the time for the past 4 months. Ha!

Cauliflower au gratin. Super satisfying, relatively easy, and a winner at all the family functions.

chili is a big one.

Hmm, hard to say since most of my meals dont really require recipes, but I am lookign forward to getting more adventurous this summer!

Ground beef in spaghetti sauce (from a jar), over steamed broccoli slaw.
It's really quick and quite tasty. Plus it helps get the veggies in!

Baked Cinnamon Chicken

I take an oven safe casserole dish and fit as many frozen chicken breasts in as I can (I'm a real leftover person). Next, dump in vegetable or chicken broth until the chicken breasts are about halfway submerged, or do half broth half water. Then generously sprinkle cinnamon all over the breasts. You can also sprinkle a little onion or garlic powder on too. Bake at 350 degrees for an hour (or for 45 minutes if breasts are thawed). The liquids really ensure moist chicken. Goes well with any kind of sauce or without any sauce.

Cinnamon chicken??? I guess it's something you'd need to try, but it sounds disgusting, LOL Then again, I used to make a cranberry chicken that LOOKED absolutely disgusting but tastes marvelous.

Quick and Dirty Eggs in Tomato Sauce when I just want something quick and tasty. This is a frequent post workout meal.

Sausage, White beans, and Escarole : super simple and really warming.
Middle Eastern Shrimp comes together really quickly.

I LOVE cranberry chicken, but I'm still on Phase 1 so I'll have to save that for another week. Cinnamon chicken is found in Moroccan cuisine, especially in the chicken pie known as "B'stila." Goes great with grilled veggies, or even with some BBQ sauce! =) (You can always wash off the cinnamon if you decide you don't like it).
