So.. i saw laughing cow cheese and bought some at the store today finally...Just kind of wondering what recipes i can put it in? Or what i can do with it??? Cause.. i bought it..now how do i use it?? Any phase 1 ideas?
I cut celery into thin strips and open up my little wedge of Laughing cow and dip/drag the celery through it. Very tasty and it takes a satisfying amount of time to eat that way. Other raw veggies work too of course, but celery is my favorite.
Spread it on a slice of turkey, roll it up and cut it into bite sized pieces.
Melt it in the microwave with a little milk and serve it over steamed veggies for a yummy side dish. (With cauliflower it's almost like mac & cheese.)
It's good in omelets and scrambled eggs, too.
In later phases, it makes a mean quesadilla with a whole grain tortilla, and is very good with apple slices or carrot sticks. I avoid rice, but my daughter makes a quick lunch with brown rice, salsa and that new chipotle flavor.
What flavor did you get? I like the creamy swiss and garlic and herb the best.
I have gotten a number of recipes for Laughing Cow cheese on the hungrygirl website. I use it in sauces and sandwiches, I like the spicier ones mixed with the diet frozen brocolli and pasta meals. I like the parmesan pepper one mixed with mashed cauliflower. Weight Watchers now puts out a similar product.
Here in Canada we don't have a huge selection - just regular, light and sometimes the garlic one. It behaves pretty much the same as cream cheese in recipes.
I like to stuff sweet mini peppers with it, spritz with a little olive oil and roast in the oven. I also like to mix a couple of wedges with a little grated parmesan cheese, garlic powder, lemon juice, and fresh broccoli florets and bake. My favorite is garlic and herb but I usually buy the swiss at Costco. It's the only flavor they have and it's cheaper to buy it there.
In Canada, we don't have the same flavors as the US. I think our only choices are original, light, and garlic & herb. I'm a big fan of garlic & herb. The Hungry Girl website has a few suggestions on using it here.
Look for the Alfredo sauce in the recipe forums (it's a Sticky.) Very good over cooked veggies or ww pasta. Also, you can tweak it a little to change the flavor. Instead of using the Light Garlic and Herb Laughing Cow and parmesan cheese for Alfredo sauce, use the Light Queso Fresco & Chipotle Laughing Cow with light Mexican blend cheese and a tablespoon of salsa for a "salsa con queso" type. Use the regular light Laughing Cow with light sharp cheddar for a cheddar cheese sauce. Delish!
Everybody, Up here in the Cold White North, we don't have all that variety of Laughing Cow. Maybe they do in Toronto and Montreal but not out here in the boonies. Suggestions to jazz up our plain brand are appreciated.
Ruthie - You could make any variety of cheese sauce using the Alfredo method and just use plain ol Laughing Cow and different kinds of cheese to stir in (instead of LF parmesan.)
My favorite no effort side dish in phase one was the "creamed spinach" recipe someone posted. Basically, cook some spinach (fresh or frozen), mix with laughing cow, eat.
