Time for a new thread...we've posted at the 500 post limit, so this is our new spot, Atkins Chicks.
I think I'm going to make a White Castle Cheeseburger Pie with green chilies and a Mexican cheese blend. I'll finish up that yummy green bean casserole (Dottie's Green Bean Casserole from Linda's Low Carb site).

Tonight I had a delicious NY strip steak topped with mushrooms and onions sauteed in butter... sides of broccoli and raw spinach. Delish! This was my "welcome to Induction" dinner so we decided it was fitting to have it on the night I wave goodbye to Induction

I eat low carb meals (not 100% Atkins) and I think this may be fitting for Atkins
I cut up chicken and peppers, onions, and zucchini, I've "marinated" it with a bit of olive oil and sprinkled some chicken seasoning over it and I'm going to grill them on skewers in the oven I think I'll cook 10-15 minutes at 400- maybe longer if they aren't done by then.

Thanks beerab, that sounds really good.
Tonight I'm having crock-pot chicken moistened with sour cream over steamed, buttered and salted green beans and broccoli. I thought about adding a sprinkle of cheese but I decided to skip it.

New to Atkins and still getting used to eating meat,
Tonight I make my very first great steak, rib eye tender and rare.
I don"t usually eat red meat but darn it was good, better than EX ever did. I could get used to this.

Dinner sounds great all around, Atkins Chicks. Way to go, Linsy, skipping that cheese. Me? Not so much...I have get my head right to eat less cheese. Having green bean casserole and White Castle pie was cheese with a side of cheese! But it was delicious, of course.

I made a taco bake on Sunday but it was "missing" something. I mean, it was ok, but just wasn't that excited to make it again. Might have to 'tweak' it a little. DH made me steak last night, and I ate a salad w/a couple chicken chunks in it at work. Not sure what we're having tonight.

White Castle Pie...
It's been a big day; I think I'm having some more of my white castle cheeseburger pie. I'll sautee the rest of the french-cut green beans in a little olive oil/butter and garlic as my veggie.

I ordered an 8pc wing from pizza hut. I'll have that dipped in ranch w/ some green beans. The meal will come out to be about 9 carbs.

Just ate a nice lunch of sauerkraut, yellow pepper and bratwurst (organic ones with 0.1g carbs in). It was delicious! Last night I went to Vapiano and had a beef, rocket and parmesan salad with rocket dressing, which was also nice! Don't know how many carbs are in either because I don't really keep track, but both were induction meals.

The ranch dressing from pizza hut is delicious...sinfully delicious. I think it has corn syrup in it, and I've been craving it ever since it's been in the house. I don't know if it's because of the corn syrup or because I just love the taste. Either way, I don't think I should eat it anymore.

Tonight I'm making the macadamia crusted salmon for my boyfriend and I. I think he is hoping I will give him mash or something with it, but he'll be getting a side of broccoli and salad!

Tonight I made a spinach "lasagna"...it's actually nothing like a lasagna but I don't know what to call it. I looked at some spinach beef casserole recipes and threw something easy together that sounded good. I browned 1lb ground beef in a skillet and seasoned it with garlic/onion powder, then added about 10oz of cooked drained spinach and a can of diced tomatoes (make sure they have no added sugar or corn syrup. Great Value brand from Wal*Mart doesn't have any). I cooked it all together in a skillet and then seasoned it with a little bit of minced dried onion and Italian seasoning. I would have added some oregano but we ran out. I then mixed in about 4oz of mozzarella and topped it with another 4oz of mozzarella. Right now I'm baking it at 375 until it's hot and bubbly. I'm estimating this to be about 4 servings, at 5 carbs per serving but the carb counts vary with ingredients used.
Edit: This was fabulous. The only thing it was missing was salt, which I forgot to add. I definitely recommend making this or something similar.

I went with easy, a steak with mushrooms and onions, with greek salad on the side. Yummy filling, and tasted like a treat.
Tomorrow am planning a leek and celeriac soup, that will keep me warm no matter what the weather!
