Raspberry Vanilla Smoothie:
1 cup raspberries (1 fruit)
1/2 cup milk (1/2 dairy)
1/2 cup vanilla (or fav) yogurt (1/2 dairy)
1 tsp vanilla (optional) -----
6 ice cubes crushed -----
1 drop Stevia extract (or other sweetener)-----
*Blend all ingredients in a blender or similar. Makes 1 large or 2 small shakes. You can use all milk, or all yogurt, depending on whats on hand and your personal preference. This is great when you have to fit in your last fruit & dairy, and want something different. *Pits sink to the bottom, if allowed to stand for a few minutes*

I really enjoy my smoothies... usually use:
3 oz. wildberry yogurt
1 cup of frozen strawberries
1/2 - 1 packet of Sugar Twin
1/2 cup water
(1/2 Fruit, 1/2 Dairy)

Sounds good MicheleR, I guess its the same concept except I use ice cubes instead of the water.
Spicy Egg Wrap:
1 egg scrambled
2 tablespoons fat free salsa
1 6" diet tortilla (I use bodywise)
cooking spray
*Spray pan with cooking spray, scramble egg, add salsa, heat through. Pour scrambled egg/salsa mixture onto tortilla, roll up. I usually add a bit of tobasco, cause I like mine spicy! You could add veggies like peppers, onions, mushrooms etc.
1/2 protein, 1/2 free exchange, 1 starch, 1/2 fat.

Baked Egg & Tomato
1 medium tomato
1 egg
Garlic, Herbs & Spices
*Preheat oven to 425*. Cut the top off of the tomato, scoop out seeds and pulp, sprinkle with herbs, spices and garlic. Crack the egg into the tomato, sprinkle again with herbs and spices, or Mrs Dash. Bake 20 mins for soft yolks, 30 - 35 mins for hard.
1 veg, 1/2 protein.

Peanut Butter Banana Yogurt
1/2 cup fat free sugar free vanilla yogurt
1/2 banana sliced
1/2 tablespoon sugar free sodium free peanut butter
*Put 1/2 cup yogurt in a bowl, add the peanut butter, mix well. Top with banana slices.
This is great as a smoothie aswell, just put all ingriedients into a blender, add 6 crushed ice cubes, blend on high for 1 minute.
1/2 dairy, 1 fruit, 1 fat

Southwestern Chipotle Egg & Turkey Wrap
1 egg (1/2P)
2oz of Turkey(1/2P) (Blue Menu - Seasoned chunk turkey)
Mrs Dash Southwestern Chipotle
Cooking Spray
1 or 2 tsp of Mayo (1 or 2F)
1 tortilla (WW for me) (1S)
Optional -
0.5 oz of grated cheese. (1/2 D)
I cook my egg scramble with Pepper & Mrs Dash Southwestern Chipotle.
I add the 2oz of Turkey chunks and mix it together for like 2 minutes until heated. I add the cheese and let it melt.
1P, 1or2F, 1S + 1/2D (optional)

Tofu Smoothie
1/2 c of Soft Tofu (1/2P)
1 c of Skim Milk (1D) - you could also go 1/2 cup and add water.
1/2 c Raspberries (1/2F)
1/4 banana (1/2F)
A bit of sweetener.
Mix all together in blender and drink!! Very very healthy and good mmmmm!

Maple glazed sweet potatoes (my fav!)
2 c of cubed sweet potatoes (4V)
1/3 c maple syrup (I use the no sugar one - count as nothing!)
1 tsp of margarine (melted) (1F)
Freshly ground pepper to taste
1. Preheat oven to 400°F.
2. Arrange sweet potatoes in an even layer in a glass baking dish (or whichever you have). Combine maple syrup, margarine and pepper. Stir in baking dish, covering the potatoes.
3. Bake the sweet potatoes for 15 minutes. Stir and cook, stirring every 15 minutes, until tender and starting to brown, 20-30 minutes.
2 Servings:
2V, 1/2F

Meatloaf in muffin pan (another favorite)
Extra lean beef (the amount necessary - hard to tell you!!)
1 egg (1/2 P)
1 tbsp of bread crumbs (don't really count it since you'll eat 1/12th of this.
2 tbsp of Worcesthire sauce (something else that doesn't really count...almost no calories)
Mustard (to your taste)
Garlic Powder (to your taste)
Pepper (to your taste)
Parmesan sprinkle (again... really small in portion - not counted)
You can add any cubed (tiny cubes) veggies in here (carrots, peppers & oignons is good).
I sometimes add a little 0.5 oz cube of cheese (or smaller) in the center of those muffins...it melts and it's OH SO GOOD!
Preheat oven to 400F.
So mix all the ingredients above in bowl. I separate in batches of 2 oz each. If you want to have them bigger, you can.
Spray cooking spray on a muffin pan (I use the 12 muffin one).
I usually fill at least 10 muffins with my meat but I try to do 12 as these are OH SO GOOD as leftovers!
Cook for above 25-30 minutes. DELICIOUS!
2 Servings (of 2oz each):
1P, Veggies if you have any, Dairy for the cheese.

Pasta Frittata (LOVE IT!)
4 portions
Egg Substitute = 4 eggs (2P)
250 g of Fat Free Deli Ham (thick slices, cubes) (2P)
2 c of Whole Wheat Linguine - cooked (4S)
1 c of mushrooms - cut (1V)
1 c of peppers - cubed (1V)
1 tsp Olive Oil (1F)
Optional:
2oz shredded cheese - strong is best (2D)
Pepper to taste
Garlic Powder to taste
Cooking Spray
1- Cook pasta according to instructions. Drain & put in fridge for 10 minutes.
2- Mix Egg Substitute with Pepper & Garlic Powder.
3- Remove pasta from fridge and mix with veggies & olive oil.
4- Spray cooking pan and put on High. Wait a few seconds and add the pasta mix to your cooking pan. Bring down it do Medium heat.
Let it cook for about 30 seconds.
5- Gently pour the Egg mix throughout the pasta mix.
6- Move your pan to make sure the egg mix is spreading evenly.
7- Cook on medium for about 20 minutes or until the egg is set.
Optional:
8- Preheat the oven to Broil (500F). If your pan is not oven free, cover with thick foil (it works - no worries...done it LOTS of times). Just double the foil if you fell unsure!
9- Once egg is set, add grated cheese on top and broil in the oven for about 5-10 minutes (to taste).
Separate your pan in 4 and you have 4 servings! SOOO GOOD!
Per serving:
1 S, 1P, 1/2 V, 1/2 D

Big Country Breakfast (courtesy of Aditi)
1tsp olive oil
1 small potato, diced
2 large eggs
1 serving ( found on package) Veggie
Canadian Bacon
2 slices toasted diet bread
2 tbsp sugar free jam ( you can use salsa instead of jam)
1 medium orange sliced
1/2tsp Flavo-Magic
Preheat oven to 400F
Heat olive in a large pan. Saute potato until golden brown.
Poach eggs or soft boil. Keep warm
Bake veggie bacon in oven until golden and crisp.
Serve poached eggs with potato, veggie bacon, toast and jam, and orange slices. Sprinkle Flavo-Magic over eggs and potato as desired.
Serves two
One serving equals 1pro, 1/2 fruit,1 starch, 1/2 fat , 1/2 free exchange

Turkey Meatloaf - 6 Servings
Celery - finely diced (1 cup)
Onion - finely diced (1 cup)
Cremini mushroom - finely chopped (4 cups) - you can use white mushrooms if you prefer
Egg - 1 large - beaten slightly
Ground Extra-Lean Turkey - 24 oz
Porcini - 1/3 oz - if you can't find porcini you can use any dried mushroom you can find. Grind it up into powder by using a coffee grinder
Whole Wheat Bread slice - 1 - bake in oven until dry then crush into breadcrumbs
Tomato Paste - 2 tbsp
Worchestershire Sauce - 1 tbsp
Thyme - Fresh (2 tsp) or dried (1 tsp)
Flavo magic and pepper to taste
Directions:
Soften celery and onion in a pan. You can spray the pan with PAM if you like, but there is enough moisture in the celery and onion to allow them to sweat naturally. After 2-3 mins add the mushrooms and cook until almost all the mositure from the mushrooms has evaporated. Put the mushroom mixture into a mixing bowl and allow to cool for 10 mins.
Once cool, add in the egg, then the remaining ingredients, saving the turkey to add last.
Bake at 375 degrees for 40 mins or until done.
To help with portion control, I baked my meatloaf in a 6-cup muffic tray. The mix divides up perfectly!
Each serving:
1 Protien
1 Vegetable
1/6 Starch
I am not sure if I am missing anything else. If I did, please let me know! Also, let me know what you think...
