Default Creative in the kitchen (inventive meals)

I know we have all done it. Cobbled together a tasty meal with what we had "on hand" to save a trip to the store.


What are your favorite successful meal you have come up with?

I threw frozen spinach and broccoli in the crockpot with some spaghetti sauce. While it cooked I sauteed fresh eggplant slices and put the sauce over it. Not too bad!

I had a bunch leftover to freeze for lunches. Easy way to get in some veggies!

This isn't exactly a 'gourmet' meal but I think it's DELICIOUS
I like grilled cheese once in a while. I use:
Sara Lee Delightful bread 90 cals for 2 slices.
2 Slices of 2% Pepper Jack cheese
One layer of sliced mushrooms
and a sprinkle of red pepper flakes.

I usually dip it in a spicy type of soup ... I like Progresso light Southwest Veggie ... I love it! And it's so easy and basic good for when I need to cook for myself when I'm home alone!
