Default HELP! Anyone know how to make Jiffy Cornbread any healthier/lower calories?

I currently count WW points, each muffin as I calculate is about 3pts. I was wondering if anyone has any idea on how to get the most bang from my buck. We are having it tonight for dinner.

Hmm.

Well, the recipe calls for oil, right? If you like a sweeter cornbread, you might try using applesauce instead.

If you like a more savory cornbread, you could add in some grated zucchini to the recipe. This will cut calories per portion, but you'll end up with more portions total. I haven't tried this, but it might work well - here's a recipe that uses the same idea: http://www.bellaonline.com/articles/art63195.asp

Nonfat milk would obviously cut the calories as compared to whole.

I don't have a box of it handy right now, but you can use eggbeaters instead of the eggs. And use buttermilk instead of regular milk. From memory, you have to add 1/3 cup milk and 1 egg per box of jiffy??? It won't save you much I'm afraid. But...you could bump up the nutrients by adding some canned chiles to it or spinach or chopped tomatoes or o0nion or all of the above.

Jiffy is my favorite cornbread ever. I make mini muffins with mexican cheese blend and a can of the green chiles, then blitz cream cheese and salsa to use as a "frosting" or dip for it. My gourmet cookin' buddies all think it's magic ROFLMAO! Unfortunately, it isn't calorie co0unting friendly. It could be tweaked to make it lower in fat and cals, but it still isn't like eating grilled fish or a bag of salad greens.

I just looked up the Jiffy mix online and discovered it has a lot of sugar and lard in it! You add egg and milk to make it. You can sub lower calorie milk/buttermilk and use egg white or eggbeaters, but the majority of the calories are coming from the mix. The nutritional information show 150 calories in a serving comes from the mix and 170 is baked. That is only an extra 20 calories from the egg and milk.

I think the real answer is finding a jiffy alternative for the future. I found a recipe for low fat corn bread that looked pretty good with basic ingredients. The muffins come out to 100 calories each. (If you are okay with substituting splenda for the sugar the muffins would be about 90 calories each.)
