We are having top round london broil which is cooking in the crock pot with a can of walmart's store brand of rotel tomatoes, chinese 5-spice, mushrooms, onions and mixed bell peppers. Will serve the veggies over some polenta.
523 calories and 14 grams of fat.
Will make wraps from leftover meat tomorrow and make some quinoa w/ spinach, onion, garlic, and a tiny bit of feta cheese to go with it.
Will freeze the rest for another time, since we don't eat too much red meat.
I am going to cook 1 cup rice in low sodium chicken broth, add 1 & 1/2 leftover grilled chicken breast chopped and frozen peas. Don't know the calorie count. We will have it with either steamed green beans w/ garlic powder or green salad.

That sunds good except for the peas, Annie. LOL! When I was a kid, my uncle used to wrap up cans of peas disguised as other things for Christmas. I HATED them then...and now. I'm odd, though, because usually when something calls for peas, I take 'em out and add...spinach. Who the heck would rather have spinach than peas???

Frozen peas taste so much different than canned. I usually throw them in frozen during the last 5 minutes of cooking. They stay green and fresh that way.
If you don't like peas, try the rice cooked with about 1/2 pouch of taco seasoning and add a can of drained/rinsed beans (any kind) during the last 5 minutes. I have also been known to add a pound of browned ground beef or turkey that has been cooked with the other half pouch of taco seasoning.
My bf made us dinner and remembered not to add any extra fat! It was pretty simple but so nice to come home to a hot prepared meal. He made baked chicken breast with garlic and seasoned salt, brown rice, and steamed broccoli. What is it about food that is cooked by someone you love that makes it taste so much better?
We had breakfast...scrambled egg whites with cheese, a couple of pieces of bacon, some hash browns (not fried....used nonstick spray) and toast with PB and sugar-free jelly....
I had baked skinless boneless chicken with a light barbecue sauce. I had a serving of cauliflower and serving of broccoli along with it. For dessert I had an apple.
Anyone know any delicious baked or grilled chicken recipes? I have been avoiding chicken for a while because I got so sick of it. However, it was delicious tonight. I'm stuffed.

Do you like asparagus? I made some pretty tasty chicken roulades with asparagus a while back, when I was suffering from chicken boob ennui.
I do like to roast a whole chicken or do chicken-under-a-brick sometimes. But I can't help but eat the delicious crispy skin when I do that!
Tonight is black bean & pumpkin soup to which I've added boneless skinless chicken breast and 10 oz raw spinach. Gotta get me my veggies in there. We'll have a tortilla to go with.
